Ingredients:
- ¼ cup olive oil
- 4 green onions, finely chopped
- 1 cup peas
- 2 carrots, finely chopped
- 200 g tender green beans, finely chopped
- 1 red bell pepper, diced
- 2 cups brown rice
- 1 tablespoon dill
- 5 cups chicken broth
Instructions:
- Heat the olive oil over medium heat and add the green onions, sautéing until translucent, about 2 to 3 minutes.
- Add the bell pepper, carrot, peas, green beans, rice, broth, salt, and pepper.
- Stir and sprinkle with dill.
- Partially cover the pot and simmer the rice until small holes appear on the surface (about 18 to 20 minutes). Then, remove it from the heat.
- Cover the pot with a clean towel, place the lid on top, and let the rice sit for 5 to 10 minutes to absorb the liquid.
- Serve as a light meal or as a side dish with meat or chicken.
