ROTD: Turkey Patties

A freezer-friendly meal to have on hand during the week

Ingredients

  • 1 cup oats or bread crumbs
  • 600g turkey mince
  • 1 medium tomato, grated
  • 2 tbsp onion, finely chopped
  • 1 tbsp olive oil
  • 6 sun-dried tomatoes, finely chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup crumbled feta cheese or goat cheese
  • Salt
  • Pepper

Instructions

  1. Heat the oil over low heat, add the onion, and cook for 6 to 7 minutes, until it’s softened. Remove from heat and let it cool.
  2. Add the oats or breadcrumbs in a bowl.
  3. Add the tomato and stir with a fork to moisten the crumbs.
  4. Add all the remaining ingredients as well as the salt and pepper.
  5. Knead the minced meat and shape into 4 large turkey patties.
  6. The mixture should not be too tight or too loose.
  7. If the patty is too moist, add breadcrumbs to absorb excess moisture.
  8. If too tight, grate a little extra tomato.
  9. In a lightly greased pan or grill, cook for 3 to 4 minutes on each side.
  10. Do not overcook, as they will dry out and become harden.
  11. You know they’re done when you pierce them and clear liquid comes out.
  12. Serve with some rice, potatoes or in a pita
