Ingredients
- 1 cup oats or bread crumbs
- 600g turkey mince
- 1 medium tomato, grated
- 2 tbsp onion, finely chopped
- 1 tbsp olive oil
- 6 sun-dried tomatoes, finely chopped
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 cup crumbled feta cheese or goat cheese
- Salt
- Pepper
Instructions
- Heat the oil over low heat, add the onion, and cook for 6 to 7 minutes, until it’s softened. Remove from heat and let it cool.
- Add the oats or breadcrumbs in a bowl.
- Add the tomato and stir with a fork to moisten the crumbs.
- Add all the remaining ingredients as well as the salt and pepper.
- Knead the minced meat and shape into 4 large turkey patties.
- The mixture should not be too tight or too loose.
- If the patty is too moist, add breadcrumbs to absorb excess moisture.
- If too tight, grate a little extra tomato.
- In a lightly greased pan or grill, cook for 3 to 4 minutes on each side.
- Do not overcook, as they will dry out and become harden.
- You know they’re done when you pierce them and clear liquid comes out.
- Serve with some rice, potatoes or in a pita
