Ingredients:
- 1 kg watermelon, peeled
- 1 tbsp honey
- 1/2 tsp cinnamon
- 250 g oat flour or other flour
- 100 g olive oil
- 50 g sesame seeds
Instructions:
- Remove the seeds and cut the watermelon into small pieces.
- In a bowl, place the watermelon flesh and its juice.
- Add the honey and cinnamon.
- Gradually add the oat flour, stirring with a spoon until fully incorporated. The mixture will be pink with small pieces of watermelon.
- Grease a small baking pan (22×30 cm) with half of the olive oil.
- Sprinkle with half of the sesame seeds.
- Pour the mixture into the pan and smooth the surface.
- Drizzle the remaining olive oil over the mixture and sprinkle with the remaining sesame seeds.
- Bake in a preheated convection oven at 180ºC until golden and crispy around the edges, approximately 1 hour.
- Peel the watermelon and weigh it. You’ll need about 3 slices.
- Allow the watermelon pie to cool completely before cutting into pieces. For extra sweetness, drizzle with a little honey or sprinkle with powdered sugar if desired.
