Ingredients:
  • 1 kg watermelon, peeled
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 250 g oat flour or other flour
  • 100 g olive oil
  • 50 g sesame seeds

Instructions:

  1. Remove the seeds and cut the watermelon into small pieces.
  2. In a bowl, place the watermelon flesh and its juice.
  3. Add the honey and cinnamon.
  4. Gradually add the oat flour, stirring with a spoon until fully incorporated. The mixture will be pink with small pieces of watermelon.
  5. Grease a small baking pan (22×30 cm) with half of the olive oil.
  6. Sprinkle with half of the sesame seeds.
  7. Pour the mixture into the pan and smooth the surface.
  8. Drizzle the remaining olive oil over the mixture and sprinkle with the remaining sesame seeds.
  9. Bake in a preheated convection oven at 180ºC until golden and crispy around the edges, approximately 1 hour.
  10. Peel the watermelon and weigh it. You’ll need about 3 slices.
  11. Allow the watermelon pie to cool completely before cutting into pieces. For extra sweetness, drizzle with a little honey or sprinkle with powdered sugar if desired.
