ROTD: Spanakorizo

If you want to watch your diet until those decadent Christmas feasts, this easy and healthy recipe is just for you

Prep Time: 10′              Cooking Time: 25′                  Serves 4

Ingredients

  • 1 kg spinach
  • ¼ cup extra-virgin olive oil
  • 1 onion, chopped
  • 1 bunch scallions, chopped
  • 1 leek, chopped
  • 1 tomato, diced
  • ¾ teacup Carolina rice
  • 1 bunch of fresh dill
  • The  juice of 1 lemon
  • Salt,
  • Freshly ground pepper

Instructions

  1. Clean, rinse and drain the spinach thoroughly, then roughly chop.
  2. Heat the olive oil in a wide, shallow pot with a thick base.
  3. Sauté the onions, leek and scallions for 3-4 minutes, until translucent.
  4. Add the spinach, diced tomatoes, and rice.
  5. Stir until lightly wilted and then add 1 ½ cups of water.
  6. Season to taste, cover the pot and simmer for 20 minutes.
  7. Sprinkle the chopped dill about 5 minutes towards the end, and pour in the lemon juice.
  8. Serve hot or cold, with a some feta cheese and a nice piece piece of bread.
  9. Enjoy!
