Quinoa Salad with Grapes: 10 minutes preparation time, serves 2
Ingredients
For the salad with grapes and quinoa:
- 350g mixed grapes, white and black
- 200g baby salad leaves
- 100g low-fat cream cheese
- 100g low-fat yogurt
- Salt
- Pepper
- 6 elongated cherry tomatoes, sliced thinly
- Mint leaves
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
For serving:
- 2 tbsp pistachios
- Sprouts
- Cooked quinoa
Instructions
For the salad
Choose the grapes you like to eat and enjoy them in a refreshing salad.
First, wash the grapes while still on the stem.
Place them in a bowl with enough water to cover them and leave them for 5 minutes.
Put them in a strainer and rinse well under running water.
Let them drain in the strainer.
Remove the grapes from their stems.
Cut half of the grapes in half.
Place all the grapes, both whole and halved, into a bowl.
Add the halved cherry tomatoes.
Add the cream cheese, yogurt, and balsamic vinegar.
Drizzle with olive oil and sprinkle with a little salt and pepper.
Finally, add the mint leaves.
Stir with a spoon to coat the grapes with the ingredients.
For serving
Serve some cooked quinoa on plates, add the grape salad, and garnish with sprouts.
Serve the grape salad immediately.
A spicy homemade cream cheese pairs very well with this recipe.
