Ingredients
- 4 tbsp olive oil
- 2 scallions, finely chopped
- 200g mushrooms
- 1/4 cup dry white wine
- Some cooked chicken or other meat
- 3 cups partially boiled fettuccine
- 1 cup chicken or meat broth
- 100g Roquefort (blue cheese)
- Salt
- Pepper
- Thyme
- Parsley, finely chopped
Instructions
- Heat the olive oil in a saucepan and sauté the scallions for 1-2 minutes.
- Add the mushrooms and continue sautéing for 2-3 minutes.
- Add the cooked chicken, sprinkle with pepper, and add thyme.
- Deglaze with white wine.
- Then add the blue cheese, partially boiled fettuccine, and broth.
- Season carefully with salt and let the sauce thicken over high heat for 2-3 minutes.
- Serve immediately.
