This “set and forget recipe” is guaranteed to wow your friends and family at the Christmas dinner table.
Ingredients:
- For the pork leg:
- 1 whole pork leg with skin, approx. 3kg
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 3 tbsp mustard
- Juice and zest of 2 oranges
- 1 rosemary bunch
- 2 rosemary branches
- Salt
- Pepper
- For the potatoes:
- ½ kg small potatoes
- 2 garlic cloves
- Juice of 2 oranges
- Juice of 1 lemon
- 1/2 cup olive oil
- 2 tbsp mustard
- Salt
- Pepper
Instructions:
- Take the pork out of the refrigerator and let it sit in room temperature for at least an hour.
- Place it in a baking dish and score the surface of the fat in diamond shapes using a sharp knife.
- Pour the orange and lemon juice over it.
- Add salt and pepper, then massage the pork.
- Add the rosemary and orange zest to the baking dish.
- Cover the pork with some baking paper and aluminum foil.
- Bake in a preheated oven at 200ºC, on the lower rack, for 1 hour and 30 minutes.
- After 1.5 hours of baking, uncover the leg, add the potatoes, garlic with its peel on, and all the remaining liquids in the baking dish.
- In a small bowl, mix your honey with balsamic vinegar and mustard.
- Brush the pork with the mixture, reduce the oven temperature to 170ºC, and continue baking for 1 hour and 30 minutes until the skin is crispy, and the potatoes are tender.
