This easy cheese pie takes just 10 minutes of preparation and 45 minutes in the oven. It is great as a snack, accompanying a salad, or even as a nice side to a full meal.

Easy Cheese Pie

Ingredients

  • 3 containers of strained yogurt (200g each)
  • 6 large eggs
  • 250g grated kefalograviera cheese
  • 400g crumbled feta cheese
  • 200g melted butter (cooled)
  • 1½ cups self-rising flour
  • Freshly ground pepper
  • 2 tbsp finely chopped fresh mint or a little dried mint

Instructions

First, beat the eggs very well in a large bowl (or heatproof dish) using a whisk or hand mixer until they become fluffy, for a few minutes.

Add the yogurt and mix until it’s fully incorporated with the eggs.

Then, add the cheeses, pepper, fresh mint, and butter, and mix all the ingredients together.

Gradually add the flour, stirring until you get a mixture that resembles cake batter.

Butter a 30 or 32 cm baking pan and pour in the mixture.

Bake in a preheated fan oven at 170°C for 45 minutes, until the pie rises slightly and the surface turns golden brown.
