ROTD: Chicken Salad

Such a versatile recipe, you can add to bread, a wrap, or just eat it plain!

Prep Time 5′     Cooking Time 20′     Serves 6

Ingredients

  • 4 medium-sized potatoes
  • 1 cup rotisserie chicken, shredded
  • 2 carrots, finely chopped
  • 1 onion, grated
  • 2-3 fresh spring onions, finely chopped
  • 2 tbsp finely chopped parsley
  • 3 tbsp mayonnaise
  • Juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 4 tbsp extra virgin olive oil
  • Salt
  • Freshly ground pepper

Instructions

  1. Boil the potatoes with their skin until they soften around 20 minutes.
  2. While still warm, peel and break them into large chunks in a large bowl.
  3. Add the chicken and all the remaining ingredients to the bowl (you want the potatoes to be still be warm cause they’ll absorb much more flavor like this).
  4. Keep it in the refrigerator until ready to serve.
