Ingredients
- 4 medium-sized potatoes
- 1 cup rotisserie chicken, shredded
- 2 carrots, finely chopped
- 1 onion, grated
- 2-3 fresh spring onions, finely chopped
- 2 tbsp finely chopped parsley
- 3 tbsp mayonnaise
- Juice of 1 lemon
- 2 tbsp balsamic vinegar
- 4 tbsp extra virgin olive oil
- Salt
- Freshly ground pepper
Instructions
- Boil the potatoes with their skin until they soften around 20 minutes.
- While still warm, peel and break them into large chunks in a large bowl.
- Add the chicken and all the remaining ingredients to the bowl (you want the potatoes to be still be warm cause they’ll absorb much more flavor like this).
- Keep it in the refrigerator until ready to serve.
