ROTD: Baked Gnocchi

This one-pot meal comes in under 30' and is so delicious you'll be making it every week.

Everything you’ll need to make Baked Gnocchi 

  • 300g fresh gnocchi, homemade or store-bought
  • 2 garlic cloves, unpeeled and crushed
  • 300g cherry tomatoes
  • 1 sprig of basil + a few extra leaves for serving
  • A bit of oregano
  • ¼ cup olive oil
  • Salt
  • Pepper
  • Sour cheese, for serving

Instructions:

  1. Preheat the oven to 200°C and line a small baking tray with parchment paper.
  2. Spread the gnocchi, cherry tomatoes (half crushed, half left whole), garlic, oregano, and basil on the tray.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Mix all the ingredients and bake in the preheated oven for 20 minutes.
  5. After baking, press the garlic cloves to release the roasted sweet flesh into the sauce (discard the skins) and mix everything well.
  6. Immediately divide the gnocchi among plates, garnishing with a little sour mizithra and basil leaves.
  7. Drizzle with the remaining sauce from the baking tray and serve.
