Everything you’ll need to make Baked Gnocchi
- 300g fresh gnocchi, homemade or store-bought
- 2 garlic cloves, unpeeled and crushed
- 300g cherry tomatoes
- 1 sprig of basil + a few extra leaves for serving
- A bit of oregano
- ¼ cup olive oil
- Salt
- Pepper
- Sour cheese, for serving
Instructions:
- Preheat the oven to 200°C and line a small baking tray with parchment paper.
- Spread the gnocchi, cherry tomatoes (half crushed, half left whole), garlic, oregano, and basil on the tray.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Mix all the ingredients and bake in the preheated oven for 20 minutes.
- After baking, press the garlic cloves to release the roasted sweet flesh into the sauce (discard the skins) and mix everything well.
- Immediately divide the gnocchi among plates, garnishing with a little sour mizithra and basil leaves.
- Drizzle with the remaining sauce from the baking tray and serve.
