Ingredients
- 1½ cups self-rising flour
- 1 pinch of salt
- ½ cup sugar
- 1 teaspoon cinnamon
- 1 egg
- 1 cup milk
- 2 large or 3 small apples, peeled and grated
- 1 teaspoon butter
- 2 tablespoons butter (to garnish)
- 3 tablespoons honey (to garnish)
- Fresh fruits (to garnish)
Instructions
- Sift the flour into a bowl with the cinnamon and salt.
- Add sugar and make a well in the center.
- Beat the egg with the milk, pour in the well, and stir with a spatula.
- Add the grated apples. If the apple releases too much liquid, add 1 tablespoon of flour to thicken it.
- If you have it on hand, a pinch of baking soda in the mixture will make the pancakes very fluffy.
- If you have time, let the mixture stand for 20 minutes on the counter.
- Heat the butter in a non-stick pan over low heat and pour spoonfuls of the mixture.
- Cook each pancake for 1 minute on each side until golden brown.
- Melt the honey over low heat until it becomes thinner.
- Remove from heat, add the butter, and mix.
- Pour over the apple pancakes and garnish with fresh fruits.
