Recipe of the Day: Yogurt Curry Chicken

This yogurt curry chicken pairs amazing with a steaming bowl of basmati rise

Everything you’ll need to make this Yogurt Curry Chicke

  • 2 chicken breasts, finely chopped
  • 3 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 colorful bell peppers, thinly sliced
  • 5-6 white mushrooms, thinly sliced
  • 1 tbsp red curry paste
  • 1 cup yogurt or coconut cream
  • 1/2 cup chicken broth
  • 2 spring onions, finely chopped
  • Salt
  • Pepper
  • Fresh cilantro, finely chopped

Instructions

  1. Heat olive oil in a pan and brown the chicken until it’s cooked halfway.
  2. Add the onion and bell peppers, cooking until softened but not browned.
  3. Stir in the mushrooms and cook until they release their liquids.
  4. Add the curry paste and mix well.
  5. Pour in the chicken broth, season with salt and pepper, and let simmer until the sauce thickens.
  6. Finally, add the yogurt (or coconut cream), spring onions, and cilantro. Mix well and serve.
