Everything you’ll need to make this Yogurt Curry Chicke
- 2 chicken breasts, finely chopped
- 3 tbsp olive oil
- 1 onion, thinly sliced
- 2 colorful bell peppers, thinly sliced
- 5-6 white mushrooms, thinly sliced
- 1 tbsp red curry paste
- 1 cup yogurt or coconut cream
- 1/2 cup chicken broth
- 2 spring onions, finely chopped
- Salt
- Pepper
- Fresh cilantro, finely chopped
Instructions
- Heat olive oil in a pan and brown the chicken until it’s cooked halfway.
- Add the onion and bell peppers, cooking until softened but not browned.
- Stir in the mushrooms and cook until they release their liquids.
- Add the curry paste and mix well.
- Pour in the chicken broth, season with salt and pepper, and let simmer until the sauce thickens.
- Finally, add the yogurt (or coconut cream), spring onions, and cilantro. Mix well and serve.
