Everything you’ll need to make this tuna and tomato pasta:
- 1 pack of pasta
- 1 onion, finely chopped
- 12 cherry tomatoes
- 1 tomato, grated
- 2 cans of diced tomatoes
- 4 tbsp olive oil
- 1/2 cup olives, pitted and sliced
- 1 can of tuna
- 2 tbsp parsley, chopped
- 1 tbsp small capers
- A bit of olive oil
- Salt
- Freshly ground pepper
Instructions:
- Boil the pasta for 1 minute less than the package instructions.
- Heat the olive oil in a deep pan and sauté the chopped onion for 2-3 minutes.
- Add the halved cherry tomatoes and cook for 3-4 minutes over high heat.
- Add the grated tomato and canned diced tomatoes. Stir and simmer for about 8 minutes.
- Drain the tuna and crumble it into the sauce.
- Add the olives and capers.
- Drain the pasta and immediately add it to the sauce while it’s still dripping with water.
- Mix everything over high heat for 1 minute.
- Sprinkle with chopped parsley, drizzle with early-harvest olive oil, and season with plenty of freshly ground pepper and salt.
- Serve the tuna and tomato pasta immediately.
