This recipe takes just 15 minutes to prepare and can be consumed cold for several days.
Pasta Salad with Shrimp
Ingredients
For the Pasta Salad
– 300g penne
– 8 shrimp, cooked and peeled
– 2 spring onions, finely chopped
– 1 cucumber, sliced
– 1 red bell pepper, finely chopped
– 1 ripe avocado, sliced
– 1 tbsp dill
– 1 tbsp parsley
For the Sauce
– 2 tbsp mayonnaise
– 2 tbsp yogurt
– 1 tsp mustard
– 2 tbsp olive oil
– A few drops of lemon juice
– Salt
– Freshly ground pepper
Instructions
- First, cook the pasta in plenty of salted water and drain it well.
- Then, place the pasta in a salad bowl along with the cucumber, bell pepper, dill, parsley, avocado, chopped spring onions, and shrimp.
- In a small bowl, combine the sauce ingredients and mix well.
- Drizzle the shrimp pasta salad with the sauce, mix thoroughly to coat everything evenly, and serve.
- To elevate this recipe, make your own homemade mayonnaise.
- Alternatively, during fasting periods, enjoy your pasta salad with vegan mayonnaise.
