Pasta Salad with Shrimp

Ingredients

For the Pasta Salad

– 300g penne
– 8 shrimp, cooked and peeled
– 2 spring onions, finely chopped
– 1 cucumber, sliced
– 1 red bell pepper, finely chopped
– 1 ripe avocado, sliced
– 1 tbsp dill
– 1 tbsp parsley

For the Sauce

– 2 tbsp mayonnaise
– 2 tbsp yogurt
– 1 tsp mustard
– 2 tbsp olive oil
– A few drops of lemon juice
– Salt
– Freshly ground pepper

Instructions

  1. First, cook the pasta in plenty of salted water and drain it well.
  2. Then, place the pasta in a salad bowl along with the cucumber, bell pepper, dill, parsley, avocado, chopped spring onions, and shrimp.
  3. In a small bowl, combine the sauce ingredients and mix well.
  4. Drizzle the shrimp pasta salad with the sauce, mix thoroughly to coat everything evenly, and serve.
  5. To elevate this recipe, make your own homemade mayonnaise.
  6. Alternatively, during fasting periods, enjoy your pasta salad with vegan mayonnaise.
