Recipe of the Day: Healthy Poached Eggs

These poached eggs are made with a twist! Be sure to try them out

Everything you’ll need to make these healthy poached eggs

  • 4 fresh eggs
  • 2 cups water
  • 1 tbsp vinegar
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 2 slices of day-old bread, for serving
  • Sfela cheese (or any other goat cheese), for serving

Instructions

  1. Pour the water into a deep pan and bring it to a boil over medium heat.
  2. Once the water is boiling, add the vinegar and a pinch of salt.
  3. Carefully crack the eggs one by one into the boiling water, keeping them whole.
  4. Cover the pan and cook the eggs on low heat for about 4 minutes, until the egg whites are set and the eggs are poached. Occasionally, spoon some of the hot liquid over the eggs to cook the tops evenly.
  5. While the eggs are cooking, toast the bread. Cut it into bite-sized pieces and divide between two plates.
  6. Add small pieces of cheese on top of the bread.
  7. Once the eggs are done, place two poached eggs on each plate and evenly distribute the hot broth over the servings.
  8. Drizzle the poached eggs with a little olive oil and sprinkle with freshly ground pepper.
