Everything you’ll need to make these healthy poached eggs
- 4 fresh eggs
- 2 cups water
- 1 tbsp vinegar
- 2 tbsp olive oil
- Salt
- Pepper
- 2 slices of day-old bread, for serving
- Sfela cheese (or any other goat cheese), for serving
Instructions
- Pour the water into a deep pan and bring it to a boil over medium heat.
- Once the water is boiling, add the vinegar and a pinch of salt.
- Carefully crack the eggs one by one into the boiling water, keeping them whole.
- Cover the pan and cook the eggs on low heat for about 4 minutes, until the egg whites are set and the eggs are poached. Occasionally, spoon some of the hot liquid over the eggs to cook the tops evenly.
- While the eggs are cooking, toast the bread. Cut it into bite-sized pieces and divide between two plates.
- Add small pieces of cheese on top of the bread.
- Once the eggs are done, place two poached eggs on each plate and evenly distribute the hot broth over the servings.
- Drizzle the poached eggs with a little olive oil and sprinkle with freshly ground pepper.
