Everything you’ll need to make Apple cake
- 170g soft butter
- 140g sugar
- 2 eggs
- 200g self-raising flour, sifted
- 1 pinch salt
- Zest from one small lemon
- 125g whole milk
- 2 firm apples (approx. 200g each)
For the Topping
- 30g sugar
- 20g almond slivers
- Powdered sugar and cinnamon for serving
Instructions
- Ensure all ingredients are at room temperature.
- Preheat the oven to 170°C.
- Grease and flour an 18-20 cm round baking pan or line it with parchment paper.
- In a bowl, beat the soft butter and sugar with a hand mixer on high speed for 3-4 minutes until creamy.
- Add the eggs one at a time, continuing to beat the mixture.
- Add the salt and lemon zest.
- Lower the mixer speed and gradually add the flour and milk alternately, beginning and ending with the flour.
- Pour the batter into the pan.
- Peel and chop the apples into 1 cm cubes, then scatter them on top, pressing gently into the batter.
- Mix the sugar with the almond slivers and sprinkle over the surface.
- Bake on the lower rack for about 55 minutes. The cake is ready when it has risen, is golden, and a knife inserted into the center comes out clean.
- Let the cake cool slightly, then carefully remove it from the pan.
- Dust the apple cake with powdered sugar and cinnamon to taste.
