Everything you’ll need to make Apple cake

  • 170g soft butter
  • 140g sugar
  • 2 eggs
  • 200g self-raising flour, sifted
  • 1 pinch salt
  • Zest from one small lemon
  • 125g whole milk
  • 2 firm apples (approx. 200g each)

For the Topping

  • 30g sugar
  • 20g almond slivers
  • Powdered sugar and cinnamon for serving

Instructions

  1. Ensure all ingredients are at room temperature.
  2. Preheat the oven to 170°C.
  3. Grease and flour an 18-20 cm round baking pan or line it with parchment paper.
  4. In a bowl, beat the soft butter and sugar with a hand mixer on high speed for 3-4 minutes until creamy.
  5. Add the eggs one at a time, continuing to beat the mixture.
  6. Add the salt and lemon zest.
  7. Lower the mixer speed and gradually add the flour and milk alternately, beginning and ending with the flour.
  8. Pour the batter into the pan.
  9. Peel and chop the apples into 1 cm cubes, then scatter them on top, pressing gently into the batter.
  10. Mix the sugar with the almond slivers and sprinkle over the surface.
  11. Bake on the lower rack for about 55 minutes. The cake is ready when it has risen, is golden, and a knife inserted into the center comes out clean.
  12. Let the cake cool slightly, then carefully remove it from the pan.
  13. Dust the apple cake with powdered sugar and cinnamon to taste.
