Ingredients
- 1/4 cup olive oil
- 4 fresh onions, finely chopped
- 1 cup green peas
- 2 carrots, finely chopped
- 200 grams tender green beans, finely chopped
- 1 red bell pepper, diced
- 2 cups brown rice (or long-grain rice)
- 1 tablespoon dill
- 5 cups chicken broth
Instructions
- Warm the olive oil over medium heat and add the fresh onions, sautéing until they become translucent, for about 2 to 3 minutes.
- Add the bell pepper, carrot, green peas, rice, chicken broth, salt, and pepper.
- Stir well and sprinkle with dill.
- Partially cover the pot and simmer the rice until holes appear on its surface (about 18 to 20 minutes).
- Remove from the heat.
- Cover the pot with a clean kitchen towel, place the lid on top, and let the rice sit for 5 to 10 minutes to absorb the liquids.
- Serve as a light meal or as a side dish with meat or chicken.
