ROTD: Turkey Pasta in Tomato Sauce

This turkey pasta is perfect if you want a change from the regular meats in your weekly menu

Everything you’ll need to make Turkey Pasta

  • 300g pasta
  • 2 tbsp olive oil
  • 1 turkey breast, finely chopped
  • 1 onion, finely chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 200g cherry tomatoes, halved
  • 1 tbsp tomato paste
  • 200g low-fat cream cheese
  • A little oregano
  • 1 tsp sweet paprika
  • Salt
  • Freshly ground pepper
  • A little parsley, finely chopped

Instructions:

  1. In a bowl, season the chopped turkey with oregano, salt, pepper, and paprika.
  2. Heat a non-stick pan, add the olive oil, and sauté the onions over medium heat for about 5 minutes until softened.
  3. Add the seasoned turkey, tomato paste, and bell peppers to the pan. Continue sautéing for another 5 minutes.
  4. Add the halved cherry tomatoes and cook for 3 minutes.
  5. Meanwhile, cook the pasta in plenty of salted water for 2 minutes less than the package instructions.
  6. Drain the pasta, saving ½ cup of the pasta water.
  7. Add the cream cheese and reserved pasta water to the pan with the turkey.
  8. Stir the sauce and cook for a few minutes until it thickens.
  9. Taste and adjust the salt and pepper as needed.
  10. Add the cooked pasta to the pan, stir to coat with the creamy sauce, and cook for 1–2 more minutes.
  11. If you prefer a thinner sauce, add a little more of the reserved pasta water.
  12. Remove the dish from the heat before it dries out.
  13. Serve the turkey pasta hot, garnished with chopped parsley.
