Everything you’ll need to make Turkey Pasta
- 300g pasta
- 2 tbsp olive oil
- 1 turkey breast, finely chopped
- 1 onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 200g cherry tomatoes, halved
- 1 tbsp tomato paste
- 200g low-fat cream cheese
- A little oregano
- 1 tsp sweet paprika
- Salt
- Freshly ground pepper
- A little parsley, finely chopped
Instructions:
- In a bowl, season the chopped turkey with oregano, salt, pepper, and paprika.
- Heat a non-stick pan, add the olive oil, and sauté the onions over medium heat for about 5 minutes until softened.
- Add the seasoned turkey, tomato paste, and bell peppers to the pan. Continue sautéing for another 5 minutes.
- Add the halved cherry tomatoes and cook for 3 minutes.
- Meanwhile, cook the pasta in plenty of salted water for 2 minutes less than the package instructions.
- Drain the pasta, saving ½ cup of the pasta water.
- Add the cream cheese and reserved pasta water to the pan with the turkey.
- Stir the sauce and cook for a few minutes until it thickens.
- Taste and adjust the salt and pepper as needed.
- Add the cooked pasta to the pan, stir to coat with the creamy sauce, and cook for 1–2 more minutes.
- If you prefer a thinner sauce, add a little more of the reserved pasta water.
- Remove the dish from the heat before it dries out.
- Serve the turkey pasta hot, garnished with chopped parsley.
