Tuna Pasta Salad

Ingredients

  • 250g penne pasta
  • 1 can tuna
  • 1/2 cup corn
  • 1 carrot
  • 1 stalk celery
  • 1 tbsp parsley
  • 1 onion, finely diced
  • 1 ripe avocado
  • 2 tbsp mayonnaise
  • 2 tbsp yogurt
  • 1 tsp mustard
  • A little lemon juice
  • Salt
  • Pepper

Instructions 

  1. Boil the pasta in salted water for 1 minute less than indicated on the package.
  2. Drain them in a colander and rinse with cold water.
  3. Sprinkle with a little olive oil and mix.
  4. Add them to a bowl.
  5. Drain the tuna well and break it apart with a fork.
  6. Add it to the pasta.
  7. Add the corn, onion, carrot, celery, parsley, and chopped avocado.
  8. In a separate bowl, mix the mayonnaise, yogurt, mustard, lemon juice, a little salt, and pepper.
  9. Add them to the pasta and mix.
  10. Chill in the refrigerator until cold.
  11. You can store it covered in the fridge for 1 night.
