Ingredients
- 5 ripe and firm tomatoes
- 2 dry onions, finely chopped
- 2 spring onions with their leaves, finely chopped
- ½ bunch of fresh mint, finely chopped
- 2 tbsp fresh oregano, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 1 tbsp chili flakes
- 1 beaten egg
- 1 cup spicy kefalotyri cheese, grated (or crumbled hard feta)
- 4-5 tbsp self-rising flour
- Olive oil for frying
- Salt
- Freshly ground pepper
Instructions
- Wash and finely chop the tomatoes and place them in a bowl.
- Add the dry and fresh onions and stir to soften them with the tomatoes.
- Add the oregano, thyme, mint, cheese, egg, chili flakes, salt, and pepper.
- Gradually mix in the flour until you get a loose batter.
- Heat the olive oil in a pan.
- Drop spoonfuls of the mixture into the hot oil and fry until golden brown, about 2-3 minutes per side. Place the fritters on absorbent paper to drain excess oil.
