Making the tomato and Sausage Pasta takes

Ingredients
- 75 g butter
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 sausage, finely chopped
- 2 tbsp tomato paste
- 800 g grated tomato
- A pinch of cayenne pepper (optional)
- Salt
- Pepper
- 1 sprig of rosemary
- 500 g pasta
- Grated cheese, to serve
Instructions
- Heat a large skillet and add half of the butter to melt over medium heat.
- Add the finely chopped onions and sauté for 4-5 minutes until translucent.
- Add the chopped garlic and sausage, and sauté for 1 minute.
- Add the tomato paste and fry it at the base of the pan for 1 minute.
- Pour in the grated tomato, season with a little salt and black pepper.
- If you want a spicy flavor, add a little cayenne pepper.
- Simmer for 15-20 minutes to thicken the sauce.
- Meanwhile, boil water in a large saucepan and add salt.
- Add the pasta and boil for 7-8 minutes.
- Using a slotted spoon, transfer them to the sauce and add the remaining butter.
- Boil, stirring, for 1-2 minutes so the pasta absorbs all the sauce.
- For a thinner sauce, add some pasta water.
- Serve the tomato and sausage pasta, either plain or with grated cheese of your choice.
