ROTD: Superfood Salad

This superfood salad is easy and comes together so quickly. Make a double, even triple batch to have on hand during the week.

For the superfood salad:

Prep. Time 10′     Cooking Time 10′     Serves 2

Ingredients:

  • 7 (200 g) washed and julienned carrots
  • 1 green apple, thinly sliced with peel
  • 1 tbsp grated coconut
  • 1 tbsp sliced almonds
  • 1 tbsp pumpkin seeds
  • 1 tbsp black raisins
  • 2-3 tbsp pomegranate seeds
  • Whole mint leaves
  • Mixed salad leaves for serving

For the Dressing:

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp orange juice
  • 1 tbsp mustard
  • A pinch of cumin
  • A little salt

Instructions:

  1. Place the carrots in a bowl.
  2. Add it to the bowl along with all the other salad ingredients.
  3. In a separate bowl, mix together the olive oil, lemon juice, orange juice, mustard, cumin, and salt to make the dressing.
  4. Pour the dressing over the carrot salad and toss to coat evenly.
  5. Serve on a platter over a bed of salad leaves.
  6. For enhanced flavor, you can marinate the salad for 2-3 hours before serving, adding the apple and herb leaves at the time of serving.
