ROTD: Pork Ribs with Barbecue Sauce

These are not just any ribs. They're deliciously marinated, perfectly cooked and topped with caramelized BBQ sauce

Prep. Time 20′ Cooking Time 25′ Serves 4

Ingredients

1 kilo of pork chops

For the marinade
2 cloves of garlic
1 tablespoon of mustard
2 tbsp brown sugar
2 tablespoons ketchup
1 tablespoon soy sauce
2 tablespoons white vinegar or rice vinegar
1 tablespoon salt
1 tablespoon of water

For the bbq sauce
2 tablespoons of seed oil
1/2 small onion
3 cloves of garlic
1 ¼ cups of garlic 1 ¼ cups of garlic ketchup
1/3 cup water
1 tablespoon worcestershire sauce
2 tablespoons smoked paprika
2 tablespoons brown sugar
1 tablespoon honey
1 tablespoon molasses
salt
pepper
1 tablespoon vinegar
1 tablespoon mustard

Instructions

Marinade

  1. Put all the marinade ingredients for the pork chops in a bowl, mix them and brush the meat on both sides.
  2. Cover and refrigerate for 1 to 4 hours.
  3. Heat the oven to 200ºC. Place a rack in a baking tray and place the meat so that the meat is on top and the bones are underneath.
  4. Bake for 10 minutes, baste with bbq sauce, continue baking for another 10 minutes and baste again.
  5. At the end, turn on the grill for 2-3 minutes to caramelize the surface.

BBQ Sauce

  1. Add the onion to the oil for 4-5 minutes over low heat.
  2. Add the chopped or whole garlic and leave it in the oil for 1 minute, add the rest of the ingredients and simmer for 15 minutes to thicken the sauce.
  3. Store in sterile jars
