Ingredients
1 kilo of pork chops
For the marinade
2 cloves of garlic
1 tablespoon of mustard
2 tbsp brown sugar
2 tablespoons ketchup
1 tablespoon soy sauce
2 tablespoons white vinegar or rice vinegar
1 tablespoon salt
1 tablespoon of water
For the bbq sauce
2 tablespoons of seed oil
1/2 small onion
3 cloves of garlic
1 ¼ cups of garlic 1 ¼ cups of garlic ketchup
1/3 cup water
1 tablespoon worcestershire sauce
2 tablespoons smoked paprika
2 tablespoons brown sugar
1 tablespoon honey
1 tablespoon molasses
salt
pepper
1 tablespoon vinegar
1 tablespoon mustard
Instructions
Marinade
- Put all the marinade ingredients for the pork chops in a bowl, mix them and brush the meat on both sides.
- Cover and refrigerate for 1 to 4 hours.
- Heat the oven to 200ºC. Place a rack in a baking tray and place the meat so that the meat is on top and the bones are underneath.
- Bake for 10 minutes, baste with bbq sauce, continue baking for another 10 minutes and baste again.
- At the end, turn on the grill for 2-3 minutes to caramelize the surface.
BBQ Sauce
- Add the onion to the oil for 4-5 minutes over low heat.
- Add the chopped or whole garlic and leave it in the oil for 1 minute, add the rest of the ingredients and simmer for 15 minutes to thicken the sauce.
- Store in sterile jars
