Ingredients
For the dough:
- 1 pack strained yogurt
- 200 g
- 150 g melted and cooled butter
- 180 g sunflower oil (or corn oil)
- 500 g self-rising flour
- 3 tbsp finely grated kefalotyri cheese
- 1 tsp baking powder
- 2 pinches of salt
- A little freshly ground pepper
- Egg yolk
- Sesame or black sesame seeds
For the filling:
- 250 g hard feta cheese, crumbled
- 100 g grated kefalotyri cheese
- A little pepper
- 1 egg
Instructions
- All ingredients should be at room temperature.
- Add the yogurt, butter, sunflower oil, kefalotyri cheese, salt, pepper to a bowl and mix.
- Add the flour and baking powder and mix.
- The dough should have an oily and soft consistency.
- Cover it to rest for 20 minutes.
- In another bowl, put all the ingredients for the filling and knead.
- Take small pieces of dough, flatten them with your palms so they become flat.
- Put a little filling in the center, fold the dough to close and press the seams with a fork.
- Mix the egg yolk with a little milk or water and brush the top of the pies.
- If you like, sprinkle their surface with a little sesame seeds.
- Bake in a well-preheated convection oven at 180ºC for about 30 minutes until they turn golden brown.
- Halfway through baking, switch the trays in the oven from top to bottom to bake evenly.
- Remove from oven and serve hot and soft or cooled and crunchy.
