Ingredients

For the dough:

  • 1 pack strained yogurt
  • 200 g
  • 150 g melted and cooled butter
  • 180 g sunflower oil (or corn oil)
  • 500 g self-rising flour
  • 3 tbsp finely grated kefalotyri cheese
  • 1 tsp baking powder
  • 2 pinches of salt
  • A little freshly ground pepper
  • Egg yolk
  • Sesame or black sesame seeds

For the filling:

  • 250 g hard feta cheese, crumbled
  • 100 g grated kefalotyri cheese
  • A little pepper
  • 1 egg

Instructions

  1. All ingredients should be at room temperature.
  2. Add the yogurt, butter, sunflower oil, kefalotyri cheese, salt, pepper to a bowl and mix.
  3. Add the flour and baking powder and mix.
  4. The dough should have an oily and soft consistency.
  5. Cover it to rest for 20 minutes.
  6. In another bowl, put all the ingredients for the filling and knead.
  7. Take small pieces of dough, flatten them with your palms so they become flat.
  8. Put a little filling in the center, fold the dough to close and press the seams with a fork.
  9. Mix the egg yolk with a little milk or water and brush the top of the pies.
  10. If you like, sprinkle their surface with a little sesame seeds.
  11. Bake in a well-preheated convection oven at 180ºC  for about 30 minutes until they turn golden brown.
  12. Halfway through baking, switch the trays in the oven from top to bottom to bake evenly.
  13. Remove from oven and serve hot and soft or cooled and crunchy.
