Ingredients
- 2 tbsp olive oil
- 1 onion, sliced
- 2 cups water
- 1/2 cup Carolina rice
- 2 cups cooked lentils
- Salt
- Pepper
- Fresh mint, to serve
- Yogurt, to serve
Instructions
- Rinse the rice under running water until it runs clear and let it drain.
- In a saucepan, heat the olive oil and sauté the onions over medium heat for 10 minutes, until golden brown.
- Remove half of the onions and set them aside for later.
- Drain the rice and add it to the onions, stirring to coat with oil.
- Add the cooked lentils, water, salt, and pepper, and bring to a boil.
- Simmer partially covered for 15 minutes until the rice is tender. If it becomes dry, add a little hot water.
- Finally, stir in the fresh mint. Turn off the heat and let it stand for 10 minutes.
- Serve the lentils and rice on plates, garnishing each portion with the reserved onions.
