Prep. Time Baking Time Serves
Ingredients
- 200 grams rice
- 1½ cups water
- 1 liter cold milk
- 2 tbsp cornstarch or rice flour
- 100 grams sugar
- A pinch of mastic
- 2 egg yolks
Instructions
- Bring the water to a boil and the rice.
- Once the rice has absorbed the water mix in the milk (reserve about 3 tbsps). Dissolve the cornstarch some cold water and add to the rice along with the mastic.
- Add the sugar and let it simmer for 2-3 minutes, stirring constantly with a wooden spoon.
- Then we beat the egg yolks with the reserved tablespoons of milk.
- Add some the rice pudding to the egg mixture to gradually change the temperature, and then pour the mixture into the rest of the rice.
- Add the pudding into a ovenproof dish, placed in a tray with cold water.
- We place it in the preheated grill until a very dark crust forms on top (be careful not to burn it though).
- Serve cold with sprinkled cinnamon on top.
