Everything you’ll need to make Sesame Bars

  • 500g sesame seeds, washed and dried
  • 500g thyme honey

Instructions

  1. Toast the sesame seeds in a large pan over medium heat until they are lightly browned.
  2. Stir the sesame seeds regularly as they roast, as they can quickly change color and start to pop.
  3. Once the sesame seeds are toasted, place the honey in a saucepan and bring it to a boil over medium heat.
  4. Skim off any foam that forms on the surface of the boiling honey.
  5. If using a thermometer, the honey should reach 125°C.
  6. If you don’t have a thermometer, test the honey by dropping a small amount into a plate of cold water. If it forms a ball that cracks like caramel when tapped, it’s ready.
  7. Add the toasted sesame seeds to the honey and stir with a wooden spoon.
  8. Continue to stir the mixture over medium heat for about 10 minutes until it thickens and forms a dough-like mass around the spoon.
  9. Transfer the hot mixture to a lightly dampened wooden surface.
  10. Flatten it with a slightly dampened rolling pin, working quickly as it will harden as it cools.
  11. For a crunchier paste, you can add 1 cup of sugar to the honey before boiling.
  12. Shape the mixture into a rectangle about 1 cm thick using the rolling pin.
  13. Cut into pieces with a sharp knife and ruler while still warm.
  14. Once completely cooled, wrap the sesame bars in plastic wrap.
