Everything you’ll need to make Sesame Bars
- 500g sesame seeds, washed and dried
- 500g thyme honey
Instructions
- Toast the sesame seeds in a large pan over medium heat until they are lightly browned.
- Stir the sesame seeds regularly as they roast, as they can quickly change color and start to pop.
- Once the sesame seeds are toasted, place the honey in a saucepan and bring it to a boil over medium heat.
- Skim off any foam that forms on the surface of the boiling honey.
- If using a thermometer, the honey should reach 125°C.
- If you don’t have a thermometer, test the honey by dropping a small amount into a plate of cold water. If it forms a ball that cracks like caramel when tapped, it’s ready.
- Add the toasted sesame seeds to the honey and stir with a wooden spoon.
- Continue to stir the mixture over medium heat for about 10 minutes until it thickens and forms a dough-like mass around the spoon.
- Transfer the hot mixture to a lightly dampened wooden surface.
- Flatten it with a slightly dampened rolling pin, working quickly as it will harden as it cools.
- For a crunchier paste, you can add 1 cup of sugar to the honey before boiling.
- Shape the mixture into a rectangle about 1 cm thick using the rolling pin.
- Cut into pieces with a sharp knife and ruler while still warm.
- Once completely cooled, wrap the sesame bars in plastic wrap.
