Everything you’ll need for the beef patties:

For the Patties

  • 1 kg ground beef
  • 1 onion
  • 1 small tomato
  • 4 tbsp olive oil
  • 1 tbsp mustard
  • 1 tbsp vinegar
  • 1 egg
  • 1 tbsp oregano
  • ¾ cup stale bread crumbs
  • 1 pinch dried mint
  • 150 g grated graviera cheese

For the Sauce

  • 4 tbsp olive oil
  • 1 lemon
  • Stock (chicken or vegetable)
  • Salt, pepper
  • 10 g butter
  • A little parsley

Instructions

For the Patties

  1. Place the ground beef in a bowl and grate the onion and tomato over it, ensuring their juices also go into the bowl.
  2. Add all the remaining ingredients, except for the cheese, and knead the mixture thoroughly until it becomes homogeneous, firm and easy to shape.
  3. Take about 150 g of the mixture and form a ball. Make a small hole in the center and fill it with the cheese.
  4. Seal the edges and flatten the ball into a patty with your palms. Repeat with the remaining mixture to make more patties.

For the Sauce

  1. Heat the olive oil in a large non-stick frying pan and brown the patties for 2-3 minutes on each side.
  2. Once they have a nice crust, squeeze the lemon over them, sprinkle with pepper, and add hot water or chicken stock to the pan so that it covers the patties halfway.
  3. Cover the pan with a lid and cook the patties over medium heat for 5 minutes on each side.
  4. Taste the sauce and add more salt if needed.
  5. Add the cold butter in pieces and turn off the heat. Shake the pan gently to melt the butter.
  6. The sauce should now be thick, well-blended, and rich.
  7. Optionally, sprinkle with some freshly chopped parsley and serve the beef patties with mashed potatoes and a seasonal salad.
