Everything you’ll need to make the mushroom Salad:

  • 200g fresh mixed mushrooms
  • 1 mixed ready-made salad (160g)
  • 100g lamb’s lettuce
  • 1 red apple
  • ½ cup walnuts
  • 100g mixed grated cheese

For serving

  • Sprouts

For the vinaigrette

  • 1 tsp mustard
  • 1 tsp honey
  • 2 tbsp balsamic vinegar
  • ¼ cup olive oil
  • Salt

Instructions:

  1. Marinate the mushrooms in a bowl with a few drops of vinegar, a pinch of sea salt, and a little olive oil. Stir and let sit for 5 minutes until ready.
  2. In a bowl, combine the mustard, honey, balsamic vinegar, olive oil, and salt.
  3. Mix everything together until it forms a smooth, creamy texture.
  4. In a salad bowl, add the mixed salad leaves, valerian leaves, chopped apple, walnuts, and the marinated mushrooms.
  5. Sprinkle with the grated cheese.
  6. Drizzle with the vinaigrette right before serving.
  7. Toss everything together and serve immediately.
