Everything you’ll need to make Shrimp Pasta:
- 400 g linguine
- 500 g small peeled shrimp
- A little olive oil
- 1 tsp flour
- ½ tsp sweet paprika
- Salt
- Pepper
- 300 g small white mushrooms
- 30 ml olive oil
- 4 sun-dried tomatoes, finely chopped
- 1 garlic clove, minced
- 50 ml dry white wine
- 100 ml heavy cream
- 100 g baby spinach
- 1-2 tbsp grated Parmesan
Instructions:
- Place the shrimp in a bowl with a little olive oil, salt, pepper, sweet paprika, and a sprinkle of flour. Mix well.
- Heat a few drops of olive oil in a pan and sauté the shrimp for 1-2 minutes.
- Remove the shrimp from the pan and keep them warm in a bowl.
- In the same pan, add a little more olive oil and sauté the mushrooms over high heat for 2 minutes.
- Add the finely chopped sun-dried tomatoes and garlic, sauté for 1 more minute.
- Deglaze the pan with white wine and add the cream. Let it simmer for 2 minutes.
- Meanwhile, cook the linguine in salted water, but for 2 minutes less than the package instructions.
- Add the spinach, Parmesan, and cooked pasta (with some of the pasta water still dripping) to the white sauce.
- Return the shrimp to the white sauce, adjust salt and pepper, and stir for 1 minute.
- Serve the shrimp pasta immediately in deep plates.
