Everything you’ll need to make Shrimp Pasta:

  • 400 g linguine
  • 500 g small peeled shrimp
  • A little olive oil
  • 1 tsp flour
  • ½ tsp sweet paprika
  • Salt
  • Pepper
  • 300 g small white mushrooms
  • 30 ml olive oil
  • 4 sun-dried tomatoes, finely chopped
  • 1 garlic clove, minced
  • 50 ml dry white wine
  • 100 ml heavy cream
  • 100 g baby spinach
  • 1-2 tbsp grated Parmesan

Instructions:

  1. Place the shrimp in a bowl with a little olive oil, salt, pepper, sweet paprika, and a sprinkle of flour. Mix well.
  2. Heat a few drops of olive oil in a pan and sauté the shrimp for 1-2 minutes.
  3. Remove the shrimp from the pan and keep them warm in a bowl.
  4. In the same pan, add a little more olive oil and sauté the mushrooms over high heat for 2 minutes.
  5. Add the finely chopped sun-dried tomatoes and garlic, sauté for 1 more minute.
  6. Deglaze the pan with white wine and add the cream. Let it simmer for 2 minutes.
  7. Meanwhile, cook the linguine in salted water, but for 2 minutes less than the package instructions.
  8. Add the spinach, Parmesan, and cooked pasta (with some of the pasta water still dripping) to the white sauce.
  9. Return the shrimp to the white sauce, adjust salt and pepper, and stir for 1 minute.
  10. Serve the shrimp pasta immediately in deep plates.
