Ingredients:
- 2 cucumbers with their skins on
- 2 containers strained yogurt
- Salt
- Freshly ground pepper
- 1 tbsp mint
- 1 tbsp dill
- A little olive oil
- A few mint and dill leaves
- 2 cherry tomatoes, finely chopped
Instructions:
Prepare the Cucumbers
- Wash the cucumbers, cut them lengthwise, and if they have many seeds, remove them with a spoon.
- Dice the cucumbers and place them in a blender.
- Add the yogurt, mint, dill, salt, and pepper to the blender.
- Blend the ingredients until you achieve a smooth, homogeneous mixture.
- If you prefer a thinner soup, add a little water and mix.
- Place the cold soup in the refrigerator to chill until ready to serve.
- Divide the soup into chilled bowls and serve as a light meal.
- Drizzle with a little olive oil, garnish with finely chopped cherry tomatoes, and top with mint and dill leaves.
