Ingredients:

  • 2 cucumbers with their skins on
  • 2 containers strained yogurt
  • Salt
  • Freshly ground pepper
  • 1 tbsp mint
  • 1 tbsp dill
  • A little olive oil
  • A few mint and dill leaves
  • 2 cherry tomatoes, finely chopped

Instructions:

Prepare the Cucumbers

  1. Wash the cucumbers, cut them lengthwise, and if they have many seeds, remove them with a spoon.
  2. Dice the cucumbers and place them in a blender.
  3. Add the yogurt, mint, dill, salt, and pepper to the blender.
  4. Blend the ingredients until you achieve a smooth, homogeneous mixture.
  5. If you prefer a thinner soup, add a little water and mix.
  6. Place the cold soup in the refrigerator to chill until ready to serve.
  7. Divide the soup into chilled bowls and serve as a light meal.
  8. Drizzle with a little olive oil, garnish with finely chopped cherry tomatoes, and top with mint and dill leaves.
