Ingredients
- 30 g unsweetened cocoa powder
- 100 g sugar
- 125 ml sweetened condensed milk
- 375 ml fresh milk
- 1 vanilla bean (seeds only)
- 250 ml heavy cream
Instructions
- In a saucepan, add the cocoa powder, sugar, sweetened condensed milk, vanilla seeds, and fresh milk.
- Stir continuously and bring the mixture to a boil.
- Once it begins to boil, reduce the heat and simmer for 5 minutes, stirring constantly.
- When the cocoa mixture is ready, let it cool completely. To speed up the process, you can place the saucepan in a cold water bath (a bowl with ice and water) and stir until it cools down.
- Once the mixture is cool, add the cold heavy cream and whisk until well combined.
- Pour the cocoa mixture into an ice cream maker and follow the manufacturer’s instructions to make the ice cream.
- Alternatively, if you don’t have an ice cream maker, you can make the ice cream by hand. Pour the mixture into a container and place it in the freezer. Stir the ice cream every 30-45 minutes for the first 2-3 hours to break up the ice crystals and achieve a creamy texture.
