Ingredients

  • 30 g unsweetened cocoa powder
  • 100 g sugar
  • 125 ml sweetened condensed milk
  • 375 ml fresh milk
  • 1 vanilla bean (seeds only)
  • 250 ml heavy cream

Instructions

  1. In a saucepan, add the cocoa powder, sugar, sweetened condensed milk, vanilla seeds, and fresh milk.
  2. Stir continuously and bring the mixture to a boil.
  3. Once it begins to boil, reduce the heat and simmer for 5 minutes, stirring constantly.
  4. When the cocoa mixture is ready, let it cool completely. To speed up the process, you can place the saucepan in a cold water bath (a bowl with ice and water) and stir until it cools down.
  5. Once the mixture is cool, add the cold heavy cream and whisk until well combined.
  6. Pour the cocoa mixture into an ice cream maker and follow the manufacturer’s instructions to make the ice cream.
  7. Alternatively, if you don’t have an ice cream maker, you can make the ice cream by hand. Pour the mixture into a container and place it in the freezer. Stir the ice cream every 30-45 minutes for the first 2-3 hours to break up the ice crystals and achieve a creamy texture.
