Ingredients
- 200g finely chopped chocolate
- 1 can sweetened condensed milk (400g)
- Pinch of salt
- 1 vanilla bean
- 350ml cold heavy cream (35% fat)
- 50g grated chocolate
Instructions
- Place the finely chopped chocolate, sweetened condensed milk, salt, and vanilla bean in a heatproof bowl.
- Melt the ingredients in a bain-marie stirring occasionally. Allow the mixture to cool.
- Whip the cold heavy cream until stiff peaks form.
- Gently fold 2-3 tablespoons of the whipped cream into the cooled melted chocolate mixture to lighten it.
- Gradually fold in the rest of the whipped cream using a silicone spatula, ensuring the mixture is homogeneous but retains its volume.
- Add the grated chocolate and gently fold it into the mixture with a spoon.
- Transfer to a bowl and freeze it for about 5-6 hours until firm.
