Everything you’ll need to make chicken meatballs:

  • 500 g small whole chicken
  • 2-3 eggs
  • 1 cup grated cheese
  • 1 cup finely chopped parsley
  • 2 slices of bacon
  • 1 grated carrot
  • 2 garlic cloves, minced
  • Salt
  • Freshly ground pepper

For the frying:

  • Olive oil

For the breading:

  • Flour
  • Beaten eggs
  • Breadcrumbs

Instructions:

  1. First, boil the chicken until fully cooked. Allow it to cool, then remove the bones and skin. Cut the meat into very small pieces and blend it in a food processor.
  2. In a large bowl, mix the shredded chicken with the grated cheese, eggs, parsley, bacon (lightly sauté is first so it crisps up), grated carrot, and minced garlic. Season with salt and freshly ground pepper.
  3. Knead the mixture well until everything is combined. Shape the mixture into long, oval-shaped meatballs.
  4. Coat each meatball first in flour, then dip in beaten egg, and finally roll in breadcrumbs. Place the breaded meatballs in the fridge for a little while to allow the coating to set.
  5. Heat some olive oil in a pan and fry the chicken meatballs until golden brown. Once done, drain them on paper towels to remove excess oil.
  6. Serve as an appetizer or a main dish with fries on the side.
