Ingredients
For the marinade:
- 1/4 cup olive oil
- 1 lime
- 1 tsp cumin
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 clove garlic
- 1/2 onion
- 2 chicken breast fillets
- Salt
- Pepper
For the vegetables:
- 1 onion
- 1 green bell pepper
- 1 red bell pepper
- 1 lime
- Flour tortillas
For the guacamole:
- 3 ripe avocados
- 1 lime
- 1 small onion
- 2 tomatoes
- 3 tbsp fresh cilantro
- 1 clove garlic
- Salt
- Cayenne pepper
For serving:
- 1 strained yogurt 200 grams
- Some grated yellow cheese
- 8 Mexican pitas
Instructions
- First, cut the chicken into small pieces.
- Put it in a food bag.
- Add all the marinade ingredients.
- Mix the ingredients and leave in the refrigerator for at least 30′. The longer you leave it, the tastier it will be.
- Grill the chicken for 4′-5′ on each side.
- Heat the olive oil and sauté all the vegetables until they soften.
- Squeeze the lime juice on the vegetables.
- Peel the avocado and mash it with a fork.
- Add all the other ingredients. Mix and chill.
- Wrap the pitas in aluminum foil and bake for 5′ at 200ºC to warm them up.
- Fill them with chicken, guacamole, vegetables, yogurt, and cheese and wrap.
