Ingredients
For the carrot salad:
- 6 large carrots
- The green leaves of green onions
- 2 tbsp. black raisins
- 2 tbsp. sliced almonds
- 1 tbsp. fresh grated ginger
- A bit of orange zest
For the dressing:
- Juice from 1/2 lemon
- 2 tbsp. orange juice
- 1/4 cup olive oil
- 1 tbsp. mustard
- 1 tsp. honey
- 1 pinch of cumin
- 1 pinch of cinnamon
- A little salt
- A little pepper
Instructions
- Grate the carrots in a food processor or on a coarse grater.
- Place them in a bowl.
- Add the green onion leaves, raisins, almonds, and fresh ginger.
- Add a little orange zest.
- Squeeze the juice of half an orange into the salad.
- Add a little salt.
- Stir to marinate the ingredients until the dressing is prepared.
- In a bowl, combine all the dressing ingredients and whisk lightly.
- Pour over the salad.
- Stir and let it marinate in the fridge for 30 minutes.
- Serve chilled.
