ROTD: Baked Pork Chops and Potatoes

A no fuss, super delicious weeknight meal to have in mind

Prep Time 10′     Baking Time 1h 30′      Serves 10

Ingredients

  • 6 pork neck chops
  • 6 large potatoes
  • 4 garlic cloves with their skin on
  • 1/2 cup olive oil
  • 1 cup water
  • 1 tablespoon oregano
  • 2 tablespoons mustard
  • Juice from 1 lemon
  • Juice from 1 orange
  • Salt
  • Pepper

Instructions

  1. Wash your potatoes thoroughly. Peel the skins of and roughly chop them.
  2. Put all the ingredients in the baking dish and mix them well. Coat your potatoes with as much of the juice present as possible.
  3. Cover the dish and bake for 45 minutes in a well-preheated convection oven at 180°C.
  4. Uncover and bake for an additional 15 minutes, occasionally stirring the potatoes with the juices from the dish and turning the chops over.
