Ingredients:
- 1½ kg fish
- 4 medium potatoes
- 2 medium carrots
- 2 tomatoes
- 2 onions
- 2 garlic cloves
- ½ bunch of parsley
- ½ cup olive oil
- Salt
- Freshly ground pepper
Instructions:
- Clean and wash the fish. Place them in a colander and, once drained, add salt to the belly and exterior of the fish.
- Leave the fish in the refrigerator while preparing the other ingredients.
- Peel and slice all the vegetables thinly.
- Place the vegetables in a 30 cm baking dish.
- Add salt, pepper, parsley, and olive oil (reserve a small amount of oil for the fish).
- Mix the ingredients and bake in a preheated convection oven at 200°C on the middle rack for 40 minutes until the vegetables are tender and have absorbed the oil.
- Place the fish on top of the baked vegetables.
- Drizzle with a small amount of olive oil and continue baking for 15-20 minutes, ensuring the fish do not dry out.
