Ingredients:

  • 1½ kg fish
  • 4 medium potatoes
  • 2 medium carrots
  • 2 tomatoes
  • 2 onions
  • 2 garlic cloves
  • ½ bunch of parsley
  • ½ cup olive oil
  • Salt
  • Freshly ground pepper

Instructions:

  1. Clean and wash the fish. Place them in a colander and, once drained, add salt to the belly and exterior of the fish.
  2. Leave the fish in the refrigerator while preparing the other ingredients.
  3. Peel and slice all the vegetables thinly.
  4. Place the vegetables in a 30 cm baking dish.
  5. Add salt, pepper, parsley, and olive oil (reserve a small amount of oil for the fish).
  6. Mix the ingredients and bake in a preheated convection oven at 200°C on the middle rack for 40 minutes until the vegetables are tender and have absorbed the oil.
  7. Place the fish on top of the baked vegetables.
  8. Drizzle with a small amount of olive oil and continue baking for 15-20 minutes, ensuring the fish do not dry out.
