Ingredients
- 800g ripe apricots, unblemished
- 2 large eggs
- 2 large egg yolks
- 60g all-purpose flour
- 150g sugar
- 1 packet vanilla
- 30g almond powder
- 200g heavy cream (35% fat)
- Powdered sugar, to serve
- Whipped cream, to serve
Instructions
- Wash and dry the apricots well, then cut them in half and remove the pits.
- Butter a 22 cm baking dish.
- Arrange the cleaned apricots tightly together in the dish, skin-side down.
- In a bowl, combine the eggs, flour, sugar, vanilla, almond powder, and heavy cream.
- Whisk the ingredients together until well combined, then pour over the apricots.
- Bake the apricot pie in a preheated oven at 180ºC for 30 minutes.
- Serve the apricot pie warm, topped with powdered sugar and whipped cream.
