Ingredients
- 250g fresh or frozen blueberries
- 350g Greek yogurt
- 1 tbsp honey or other sweetener
Instructions
- To make blueberry frozen yogurt popsicles, you will need individual popsicle molds.
- You can also use small disposable cups with popsicle sticks.
- Place the blueberries in a pan and heat over medium heat.
- Crush the blueberries with a spoon or fork until they start releasing their juices.
- Keep some pieces intact without fully mashing them.
- Add the honey and gently stir. Cook until the berries have a deep purple color, about 6-7 minutes. Remove from heat and let cool completely.
- In a bowl, mix the yogurt with 1-2 tablespoons of water or milk to thin it out so it can easily fall off the spoon.
- Add the cooled blueberries to the yogurt and gently mix. For a marbled effect, do not overmix, so purple swirls remain in the white yogurt. For a uniform purple color, mix thoroughly.
- Taste the mixture to see if the sweetness is to your liking. Add more honey if desired.
- Pour the mixture into the popsicle molds and freeze for 3-4 hours until completely set.
- To remove the popsicles, dip the molds briefly in warm water to release them.
- You can use various fruits depending on the color you want. Blueberries for a purple color, strawberries for a pink color, blackberries for a red color, or mango for a yellow color.
