Recipe of the Day: Sugar-free Oat Bars

Energy bars tend to cost an arm and a leg at coffee shops, so learn to make these delicious Oat Bars at home for whenever you need a pick me up!

Here’s everything you’ll need to make these Oat Bars:
  • 70 g oat flakes
  • 150 g oat milk
  • 50 g soft dates
  • 50 g sultana raisins
  • 1 tbsp tahini
  • ½ unwaxed orange, juice and zest
  • ½ tsp cinnamon
  • 2 pinches baking soda
  • ½ tsp baking powder
  • 50 g sugar-free chocolate
  • A little melted chocolate for garnishing

Instructions:

  1. Line a baking tray with parchment paper. Preheat the convection oven to 160°C (320°F).
  2. In a small saucepan, warm the oat milk, being careful not to let it boil.
  3. Remove from the heat and add the dates and raisins. Let the dried fruits soak for 10 minutes.
  4. Blend the oat flakes in a blender.
  5. Add the oat milk with the soaked fruits, orange zest, juice, tahini, and cinnamon to the blender and blend until smooth.
  6. Finally, add the baking powder and baking soda and mix well.
  7. Fold in the chocolate chips gently with a spatula.
  8. Spoon the mixture onto the prepared tray and form a square approximately 14×14 cm (5.5×5.5 inches).
  9. Bake on the middle rack of the preheated oven for 25 minutes, until the bars rise and set.
  10. Let the mixture cool completely, then cut it into bars with a sharp knife.
  11. Dip the oat bars into melted chocolate and place them on parchment paper until the chocolate sets.
  12.  Eat immediately or store in an air tight container for several days.
