Here’s everything you’ll need to make these Oat Bars:
- 70 g oat flakes
- 150 g oat milk
- 50 g soft dates
- 50 g sultana raisins
- 1 tbsp tahini
- ½ unwaxed orange, juice and zest
- ½ tsp cinnamon
- 2 pinches baking soda
- ½ tsp baking powder
- 50 g sugar-free chocolate
- A little melted chocolate for garnishing
Instructions:
- Line a baking tray with parchment paper. Preheat the convection oven to 160°C (320°F).
- In a small saucepan, warm the oat milk, being careful not to let it boil.
- Remove from the heat and add the dates and raisins. Let the dried fruits soak for 10 minutes.
- Blend the oat flakes in a blender.
- Add the oat milk with the soaked fruits, orange zest, juice, tahini, and cinnamon to the blender and blend until smooth.
- Finally, add the baking powder and baking soda and mix well.
- Fold in the chocolate chips gently with a spatula.
- Spoon the mixture onto the prepared tray and form a square approximately 14×14 cm (5.5×5.5 inches).
- Bake on the middle rack of the preheated oven for 25 minutes, until the bars rise and set.
- Let the mixture cool completely, then cut it into bars with a sharp knife.
- Dip the oat bars into melted chocolate and place them on parchment paper until the chocolate sets.
- Eat immediately or store in an air tight container for several days.
