Everything you’ll need to make Grape Jam
- 2 kg black grapes
- Lemon peel and lime peel
- 1 sprig of rose geranium
- A few drops of lemon juice
Instructions:
- Wash the grapes thoroughly and remove the seeds by gently squeezing each grape between your fingers.
- Place the grapes in a heavy-bottomed pot and simmer on low heat in their own juice.
- Stir occasionally. Simmer for about 2 hours, or until the volume is reduced by half.
- Towards the end of cooking, add a sprig of rose geranium, lemon peel, and lime peel to infuse flavor.
- In the final stage of cooking, add a few drops of lemon juice.
- Pass the grapes through a food mill to mash the pulp into the pot. Alternatively, strain the mixture through a fine sieve, pressing down with a spoon to extract the pulp while leaving the skins and rose geranium behind.
- At this stage, the jam will be quite liquid. Return it to the heat and cook until it reaches a jelly-like consistency.
