Here’s everything you’ll need to make this Raisin Cake:
- 250 g margarine
- 450 g water
- 300 g mixed raisins (golden and black)
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground cloves
- 400 g sugar
- 400 g flour
- 1 tsp baking soda
- Zest of 1 orange
- 2 tsp sesame seeds
Instructions:
- In a saucepan, add the margarine, water, raisins, cinnamon, nutmeg, cloves, and sugar.
- Bring the mixture to a gentle boil and simmer for 10 minutes.
- Remove from heat and let the mixture cool down.
- Preheat the oven to 170°C (340°F).
- Butter a rectangular pan (22×33 cm or 8×13 inches).
- Add the flour, baking soda, and orange zest to the cooled syrup mixture.
- Gently stir the mixture until combined, without overmixing.
- Pour the batter into the prepared pan and sprinkle sesame seeds on top.
- Bake for about 55 minutes.
- Let the cake cool completely before cutting into pieces.
- Optionally, dust the raisin cake lightly with powdered sugar once cooled.
